The word hummus, حمّص (which has various spellings) is an Arabic word meaning “chickpea.” Hummus is a Levantine Arab dip or spread that is made from chickpeas (also known as garbanzo beans) that have been cooked mashed, and then blended with tahini (a paste made from sesame seeds), olive oil, lemon juice, garlic and salt. Classic Hummus is easy to make and versatile. Use hummus as a dip for vegetables, as a main ingredient or as a spread in sandwiches or wraps.
One of my favorite picnic foods, Hummus is best if made 3-4 hours in advance to give the flavors a chance to blend.
Garnish with several whole chickpeas and fresh chopped parsley if desired.
1 can (15 ounces) of chickpeas can be substituted in this recipe.
