Green Beans, Basil, Hard-Boiled Egg, and a Tomato-Onion Vinaigrette. This is a vegetarian version of the classic Italian Tuna Hero that I used to enjoy so much. Made with exactly the same ingredients except tuna. Perfect to take on a short hike or outing and serve as a picnic lunch.

1 teaspoon red wine vinegar
3 teaspoon olive oil
1 clovegarlic, minced
6-7fresh basil leaves, chopped
2 slicestomato, diced
1 slicered onion diced
to taste salt and fresh ground pepper

Italian Picnic Hero Sandwich,
Preparation
- In a small bowl combine vinegar, oil, garlic, salt and pepper, basil, tomatoes, and onion. Toss with a spoon to blend.
- Cut bread in half lengthwise, and open on your cutting board
- On the bottom half first place the green beans then top with the tomato-onion mixture, saving as much of the oil and vinegar as you can in the bowl.
- Spread the remaining oil and vinegar evenly on the top half of the bread.
- Place the egg slices on top of the tomato-onion mix, and fold the top half down to close.
Serving Suggestions
If you are planning a picnic, wrap the sandwich in plastic wrap, and serve within 1 or 2 hours. The sandwich does taste better after the flavors have had a chance to mingle for an hour. The sandwich will also taste better after an hour of anticipation. This Hero can also be made on a large 1 lb. loaf of bread, and cut and divided between 2-3 people, just double or triple the ingredients.
