1 or 2 handfuls tortilla chips
1/2 cup pinto beans drained
1/2 cupcheddar or mozzarella grated
1/2 avocado cubed
pickled jalapenos slices
red onions diced
cilantro roughly chopped
sour cream
salsa
Perfect Microwave Nachos
Preparation
- In the microwave, preheat the beans in a cup or bowl.
- Arrange the desired amount of tortilla chips on a large dinner plate.
- With your hand sprinkle the cheese evenly over the chips, then with a spoon spread the beans out evenly.
- Microwave for 30 seconds to 1 minute or until you can see the cheese begin to melt.
- Add the following ingredients evenly over the top, avocado, jalapenos, onions, and cilantro.
- Top with sour cream and the salsa of your choice.
Serving Suggestions
No cheese and no sour cream = Vegan Nachos
You can easily add or omit ingredients as you like, or depending whats in your refrigerator.
