Vegetarian Chili sin Carne

This is the ¨Classic Chili Recipe¨ ¨con mucho historia¨. First its the same recipe that my mother prepared for me and my sister 40 years ago, of course mom made it with a pound of ground beef. Second, its the first dish I began cooking on a regular basis, and became a car camping staple. Third, as an outdoor leader with SDSU Aztec Adventures I added this chili to our trip menu, satisfying the participants, and impressing the program director as well. And forth, I introduced this recipe at Norton Rat's Tavern in Cusco, Peru where some of my patrons were eating this chili twice a day. More recently the SIN CARNE version has been a big hit at potlucks. Finally, after all these years, here is my mom's classic chili recipe made vegetarian. Vegetarian Chili sin Carne is the original recipe made without meat, nothing more has been added. Enjoy!!

Ingredients

Original Recipe
1-2 Tabelspoons Olive oil
1 or 2 Cloves of Garlic, diced
1 Med. White onion Finely chopped
1 can Stewed tomatoes
1 can Kidney beans, drained
1 Tabelspoon Chili powder Substitute a packet of Chili spice mix to replace all the dry spices.
1 teaspoon Cumin
1/2 teaspoon black pepper
1/2 teaspoongarlic powder
1/2 cup Water or vegetable broth
The Potluck Version includes additional ingredients.
1 can Pinto beans, drained or cook 1 cup dry pintos
1 can Black beans
1 handful, 125 grams chopped mushrooms portobello are best

Vegetarian Chili sin Carne

Preparation

  1. Heat oil in a large pot over medium. Add the onions and garlic and cook until soft and translucent, about 5 minutes..
  2. Add one can of stewed tomatoes. If the tomatoes are whole, chop or break up the tomatoes with a wooden spatula.
  3. Add the can of Kidney beans.
  4. Add all powdered spices and a half cup water or broth.
  5. Bring to boil, then turn down the heat and simmer for 15 to 20 minutes, stirring occasionally.
  6.  For the ¨Potluck Version¨ add the mushrooms, pinto beans, and black beans in step 3.

 Serving Suggestions

Serve with bread or rolls and butter, bunch green onions/scallions. Other toppings include grated cheese, and sour cream. Vegetarian Chili sin Carne has been a big hit at potlucks, simply double or triple all ingredients, but don’t forget a french baguette, a stick of butter and the green onions.
