This quick, easy to make vegan yellow lentil dal is super comforting, creamy and flavorful. A protein packed staple common in almost every Indian household dal is typically served with flatbread or basmati rice! To cook lentils the bag directions says 1 cup lentils to 3 cups water.

1-3/4 cupyellow lentils
5 cupsvegetable broth
2 tbspolive oil or vegan butter
1/2onion, finely diced
2-3cloves garlicfinely diced
1 tsp fresh ginger, mincedoptional
1 tsp cumin powder
1 tsp turmeric
1 tsp coriander powder
1 tsp garam masala
1-1/2 tsp salt
1/4 cup cilantrochopped to garnish
pinchred chili flakesto taste, to garnish
- Heat the vegan butter (or oil) in a saucepan. Add chopped onions, garlic, and ginger and sauté for about 5 minutes, stirring occasionally
- Add the other spices and seasonings and sauté for another 2 minutes, stirring.
- Add the vegetable broth and lentils bring to the boil, then reduce the heat and let it simmer for about 15 minutes stirring occasionally.
- As soon as the lentils have absorbed most of the liquid and are soft remove from heat. Its done!
Serving suggestions
Serve with fresh homemade naan bread or with rice or just as it is.
Season with salt, lemon juice, black pepper, and/or a bit of sugar to taste.
Garnish with fresh chopped cilantro or parsley and chili as desired.
